I remember seeing a thread on another forum pointing to another real life disease with matching symptoms and everything, but I could never find it again :/

And technically speaking, even if it was AIDS/HIV, that would not have killed Itachi, the disease only weakens your immune system and leaves the infected vulnerable to infection/illness. It would take some other illness/infection to kill you, which is why the link my previous post makes more sense.
