Why aren't there more Kakashis?

Yes but you have to remember they originally had Minato with them. No one was worried. Minato made the decision to leave them with a prodigy like Kakashi, that was his mistake. I'm not saying they were, Obito is proof that they were not. I'm only saying that kids would not have been sent on missions that could have jeopardized the clan like that without a Jounin. As for adults, I think you're underestimating the sharingan. 3T Sasuke in Part one could predict the movements of a jinchuuriki. Most enemies from other villages could not have handled the Uchiha.

They didn't anticipate an ambush, just as they didn't anticipate being under attack by Zabuza. That kind of uncertainty is par for the course of the ninja world and the village either does not, or cannot safeguard against that.

If Shisui can be overwhelmed by 6 people, a child can be overwhelmed by a group of enemy ninja. Sasuke is not an example of an average Uchiha.

They certainly can't see the future, but a ninja should always be prepared. The Uchiha were a very proud clan no doubt they had a hand in the planning of each mission that an Uchiha took part of, too make sure nothing happened to him or her.

You have to remember Obito was considered the black sheep of the clan, in other words, at that time Obito was probably as bad as it gets for the Uchiha

That's part of my point, in the series it never seemed as if they saw it as a threat to prioritize against. A single sharingan falling into enemy hands could mean some serious serious carnage for the leaf. Can you imagine what would've happened if kamui had been obtained by an enemy?
