Why aren't more NH fans disappointed Bolt and Himawari don't have the byakugan?

This means that they didn't inherit Hinata's most important trait and would have been equally strong with a civilian fodder as a mother. I know NH fans are very happy about being cannon and the movie but I don't know how many times they talked about how strong NH kids would be with the byakugan and Uzamaki chakra and now that did not happen. She can't even really teach them anything like the gentle fist fighting style since that requires the byakugan to be effective.

My guess is Kishi did not give the kids the byakugan because he did not like the way they would look with it. I also think he would have a hard time incorporating the Hyuga fighting style into Bolt for the new series and would rather him fight more like Naruto so he simply did not give them the byakugan.

We haven't seen any non-pure Hyuugas, thus it's a possibility that they can UNLOCK their Byakugan just the same way Uchihas unlock their Sharingan - some time later during training.
It's a loop hole that was never covered.

also, there is 2 solutions now since Kishimoto admitted he simply forgot this detail:

* giving them a new version of the byakugan they can activate/desactivate like the sharingan/rinnegan
* giving us baby n°3 with a freaking combo (byakugan + red hair and special chakra from Kushina + Uzumaki chakra chains is what i want)

You got this from one chapter, not only that like 10 panels of Sarada tailing Bolt and reporting her findings to Sakura, how you arrived at this conclusion I don't know.
