Who were the kindest members in the Akatsuki?

Konan definitely. Even her attack style screams peaceful.
Itachi was the only one mentioned to be merciful against his opponents. He just did bad things due to his facade and mission. However, he'd avoid it when possible so I guess that is at least something.
The rest were never mentioned to be kind as adults. Though, Obito/Konan/Nagato were mentioned to be kind when they were kids before all that bad stuff occurred to them. But, we know all that Obito did and Nagato/Konan killed every man, woman, and child in Hanzo's clan since they were upset and wanted revenge just for his actions alone. That was when Hanzo wasn't even a direct threat at the time and the crimes he had done against them were long past. And had no problem destroying the Leaf because of the actions of deceased leaders.
I wouldn't say any member was "kind" or any shinobi in this manga is. The closest you'll get to "kind" is Teuchi the Ramen guy. But to say who was the least jerk-like out of a group of criminals (who are all S-rank murderers), it is Itachi- no contest. He also had the best reasons and it wasn't who he really was at his core- he wasn't misguided like all the rest were or legitimately believed in the negative actions. He was the necessary evil.

Itachi and Konan were the kindest to me. Konan deeply cared about yahiko and nagato and did everything she could for them. Itachi was a selfless hero who sacrificed his life and reputation for his brother and village. Nuff said.

Kisame is treacherous.
Kakuzu is business minded like Donald Trump.
Hidan is a cult member. Tbh, Hidan is a special case. What if Hidan was Christian? He would be peaceful and kind for God. Because he loves Jashin, he craves for violence. But this makes him a follower. I wouldn't say he is kind. He is like a blank canvas who needs religion to guide him.
Zetsu is an ancient evil.
