Just because Neji can see the chakra doesn't mean he can avoid it. SAsuke is much faster than Neji and the only reason he survived was due to lightning affinity. Deidara's arsenal is just too much for Neji

Deidara came into that fight with that already prepared. Not to mention it doesn't explode until it actually hits the ground, so it is possible Neji could intercept and cancel it out with Gentle Fist. Deidara also has a limited amount of clay, so flying in the air dropping bombs isn't something he can do endlessly. Not to mention it could possibly be avoided by simply running away, considering how fast Neji is, being able to cover 50+ m with two holes in his body in mere seconds, and that was only as a child. There's also the terrain to consider, which could work greatly in Neji's advantage.
Not to mention Deidara needs to clap his hands together in order to form his clay bombs, and we saw how Sasuke just stood around allowing him to do so.

The clay is made of Chakra, so it's possible for Neji to destroy it with Gentle Fist. Granted, this isn't 100% proof that the explosions within the clay would become neutralized, but it is possible. Likewise, such explosions could potentially be blocked by Rotation given that it's a shield of pure akin to Susano'O. Again, I know Deidara is superior to Neji in every way, I'm merely saying that, assuming everything is in Neji's favor, such as intel/terrain, including any assumptions made such as the red above, then he could beat him potentially. Being able to beat someone doesn't mean they are stronger.

Neji has to physical touch the clay objects to insert chakra into them, no where has Neji, or any Hyuga for that matter inserted chakra internally without physical contact, and don't even say Air Palm, because Kisame wouldn't have tanked it effortlessly if internal damage had been done, there's no such thing as tanking internal damage.

Considering how Kishi nerfed all the Akatsuki (sans Kisame) to grant victories to the K11 and Sasuke, I wouldn't put it past SP having Neji at least fighting Itachi to a stand still.

Sakura's sole instance of usefulness, agility and tactics in her fight against Sasori. Kishi wrote that Sasori ends up dying because he was so bored that he didn't feel like dodging.
Itachi was so OP, with a total defense (Susanno + Yata mirror) and had the Totsuka blade, but his defeat comes by way of mystery illness that was never brought up before the fight and remains a mystery after. And yet Sasuke gets all the credit for killing Sasuke. No asterisk for the illness assist is ever mentioned.
Deidara kills himself in a kamikaze attempt, despite both Sasuke and himself being out of chakra and neither could attack the other any more. Tobi was nearby, but Deidara wanted to die all of a sudden to kill Sasuke. When Deidara's repeated stated goal was to kill Itachi.
