In my mind, the three major "chronicles" or stories from the past ( much like the three chapter Kakashi Chronicle of his past/early Konoho days) which i'd love to see (except way longer/fleshed out) are:
Madara/Hashirama Age - It would cover the Foundation of the ninja age, the ninja villages/creation, battles and wars from when shinobi fought as their respected clans, ultimately leading up to the foundation of the leaf and the Madara hashirama fight.
We'd find out key information on the Uchiha and Senju clans, their abilities, their heritage and its connection to the So6p, even about the tailed beasts past because Hashirama was said to have control over multiple before he spread them between villages.
Jiraiya/Tsunade/Oro Arc - From naruto wiki: The Sannin were a group of three legendary ninja, noted to be three of the greatest ninja of their time. While all three eventually left the village at some point for their own reasons, they still retained their title as the Sannin.
We'd find out about their early days in Konoho with the third hokage as their teacher (known as the God of Shinobi),
Before Oro defected, we'd learn of his entanglements with Root and Danzo, his human experimentation, how he became a sick son of a b*tch. We'd learn of Tsunade + Dan + Nawaki, how Minato came about (or literally, out), Jiraiya's puberty filled youth, lust and attempts for Tsunade's affection.
How did each Sannin stumble upon the Sage villages? Where and what are snake and slug sage areas like and who were the mentors/animals which gave the Sannin their summoning abilities?
Also, we could see the battle which they earned the name Sannin for!
my third choice/the main one i'd find interesting is the tale of Team Jiraiya
No favoritism meant, as much as i'd love to see Orochimaru's tale after leaving the village as a main plot focus, Jiraiya is the one who taught Minato, who is both the Leaf's fourth hokage and Naruto's father. Jiraiya is Naruto's substitute father figure, Naruto's master and Godfather, his only family.
In this tale, we could learn more about the Ame Orphans, how Nagato got Rinnegan, who Nagato was in his early life. How he was prompted through Tobi to form the organization Akatsuki
about Team Jiraiya, and Minato's years as a Genin. The tale would be as much about Jiraiya as it would be about Minato.
Also, we'd learn about the Uzumaki clan, through Mito and Minato. How he developed his Jutsus, how he learned sealing jutsu, how he fell in love and how Naruto came about.
