Hard to say. Classical music is hard to compare because it's all very amazing.

Are you specifically asking for symphonies or also concertos, quartets, sonatas, etc?

I was always amazed by Beethoven and Mozart, if I have to choose just one it would be impossible.
The 6th Symphony Pastoral is one of them and is beautiful.
