Which family has more potential? (skill wise)

In Naruto/Hinata's case both parents have connections to the Sages family. Naruto being a reincarnation of Asura and a member of the uzumaki clan who are related to senju who are descendants of Asura. While Hinata's Family seems to be conntected to the sages brother due to their byakugan. Plus as far as we know all Hyuga's are born with the byakugan.

While there is no guarantee an Uchiha will unlock the sharingan. Even if they do get 3T there is no guarantee they will Gain Ms or Ems (unless they turn on each other). Plus in this case only one of the parents had connections to the sages family.

I lean more towards naruto/hinata than Sasuke/sakura but Sasuke/Hinata might breed a new dojutsu all together.

Well, if Sasuke's children will stay at 3T Naruto's ones would come on top by a small gap. With MS (and EMS) the roles are inversed: the Uchihas would have a very strong arsenal (composed of firepower and opness) while the Hyuzumakis would have a mediocre eye and high chakra, possibly sage mode. In the end:

Uchihas EMS-MS > (medium gap) Hyuzumakis SM > (large gap) Hyuzumakis > (small gap) Uchihas 3T

Except those are Naruto's feats, a chakra monster and a perfect Sage Mode user, not feats of half blood Uzumaki childs who aren't even guaranteed to be able to learn SM, let alone master it. The same for Kaiten/Neji's feats.

Even then, those feats are nothing in front of EMS/MS abilities (Rasengans bar Rasenshuriken aren't enough to bust higher levels of Susanoos, Kagutsuchi perfectly counters Kaiten, Amaterasu is also dangerous itself). It depends on the individual levels of the children, some of them could be monsters, some of them could not.
