AoT has some pretty good OST, so does OP and HxH. But I think I have to go with FMA: Brotherhood and Code Geass. That final OST in Code Geass, the final scene, brings tears to my eyes every time. FMA: B's openings are the best I know of.

For along running series I'd say Naruto and Bleach. Naruto has a lot of badass chanting and Bleach's Espada themes are really good.

One Piece has like 3 OST's and they have used them for all of the 600 episodes. In Naruto and Bleach they change them as the series progresses, I'm so tired of One Piece's. Learn to make new ones.

For short series? Attack on Titan for sure.

Of those I'd say Fairy Tail. They have a great deal of diversity.

Other good OST's to me are Yu Yu Hakususho and Ruroni Kenshin.
