Hyuga's use of chakra control is more precise and more accurate. Their main function is pinpointing the base of the chakra, known as the chakra network and hitting the chakra points. Of course their eyes help them to see this, but they also display good control when hitting the points from their finger tips, which is also another good feat of their control of chakra. Neji for example, has shown great magnitude in using his chakra from all over his body in different ways, even with Kidomaru, he was able to channel his chakra through a fking string and weaken Kidomaru and his CS. Another feat of the Hyuga is just using the basic Rotation jutsu that displays a giant perfect ball of chakra, mainly used for defense against opponents. Another feat is also using the chakra points to exert their chakra from outside of their body to release in an exploding attack. This is unique, and only the Hyuga's has shown to do this, specifically Neji.
Medical Ninjas are known for their small, cellular and delicate chakra control, but they are not quite as precise with their control as the Hyuga's. In fact, you can't compare each other. They are both different types of control. One used for offense and defense while the other is used for remote healing and surgical feats.
In my opinion, the Hyugas have more options with their good chakra control and can use their chakra in more different and convenient ways where as the medical ninjas are only limited to healing and extracting from the human body.
