not only did Kakashi beat Zabusa without using his sharingan thanks to the hidden mist in their second encounter

but let's not forget that Kakashi improved alot of the Part 1 & Part 2 time skip...after his encounter with Itachi he greatly improved his taijutsu and hand seal speed, enabling him to blitz jutsu after jutsu in rapid succession, maybe not equal to Itachi's hand seal speed, but close enough which is still far above Zabuza

Didn't this already happen in canon (sort of)?
I doubt the Sharingan makes that much of a difference to a guy like Kakashi. Of course it helps, but his insticts, awareness and counters are still there.
I'll go with Kakashi regardeless.
