The 12 guardians aren't part of the Sarutobi clan, they just had a member of their clan in their ranks. (Asuma Sarutobi)
And the Sarutobi clan were one of the first clans to join the senju and uchiha's new village hidden in the leaves.
Members of the Sarutobi clan are also seen in the manga using fire jutsu to super heat the quicklime the 10 tails is caught in, in order to solidify it.
There have been more shown members of the Sarutobi clan than the Senju clan, but you don't discount them as a clan
