It seems they're power is undermined due to them being captured by the akatsuki and Obito manhandling them during the war, but there is so much that they can do, for instance, what is the story behind the "SAGE" Monkey Yonbi, are all of the bijuu made up of sage chakra? Why did kyuubi look like he was absorbing senjutsu when recovering his chakra?

Well, bijuu alone they do have raw power, it's just not controlled in contrary to when they are sealed within jinchuuriki. The jinchuuriki are the solutions to the means of controlling this power. Though some have failed, while others like Bee, yondaime mizukage, and Naruto, who having controlled the bijuus' power have shown the tailed beasts to be powerful on a whole other level.
