She could figure out Hinata's attack patterns and abilities as a Hyuga. Hinata has just a .5 above Sakura anyway in taijutsu, that doesn't mean she will be unharmed. If you think Sakura can't get at least one chakra enhanced punch/kick on her than you cray cray. Hinata needs to touch a chakra point, not just her arm btw.

Kakashi's stats are higher than Hebi Sasuke's. Does that mean Kakashi's stronger? Some of those lacks of points come from things like low strength, which is unnecessary for Hinata's fighting style. A single hit is very dangerous. It's attacking internal organs. Not saying it's a one shot, but a single touch is deadly.
