there was a number of fights you point out in which there were relatively gigantic entities were used Lol
Instead of saying "why are you still reading?", i'll just say the signs pretty much pointed towards the ante getting raised on power and jutsu scaling ever since the Sannin went at it in P1. Maybe even before then. It's an entirely different universe, but some of every area in NYC got destroyed in the Ion vs. Superboy-Prime fight, and it wasn't lame at all.
I believe that sometimes it's the matchups and how they were written that leaves ppl underwhelmed.
