What do people mean with doing software?

I sent my broken Android to a retard and he did a "software" to it(cuz he thought there was a virus and there wasn't, it was just +18 chrome history as what my antivirus thought they are), and when I checked all he did was factory reset and it kept the Kernel update and he didn't make a backup to my data.

Is it just factory reset?

He probably reinstalled the whole operating system.

You probably got screwed, first of all android is based on linux so it being effected by a virus is a slim(like really slim) chance. The only way you get effected is if you give a root permission to the app or give a DUMP permission through adb. Or install a app which give permission to your personal data but this isnt virus but more of a identity theft.
Better upgrade to a Marshmellow OS or root your phone and install appOPPs.
Both of these gives you the ability to remove selected permissions from an app. Say if you deny whatsapp camera permission then whatsapp wont be able to use your camera.

Yeah alot if you know what you are doing, i have been flashing, modding, rooting roms for last 4-5 years with every android device i get.
With the appOPPs and marshmellow i can control everything my apps are doing, what permissions they can have and what things they cant touch, and which apps should have root permissions.

What are the benefits of rooting? I've been planning on rooting my Galaxy S5 for years.

It allows mods, just like a PC does with games, you get access to your phone's inner folders (root) and you can give apps permission to do things they wouldn't be able to do, like change font (other than the predefined), use game killer just like you would use cheat engine on PC, remove pre-installed apps and a couple of other debugging options. It gives you more control over your phone (also makes you slightly more vulnerable)
Generally if you don't have any visual modifications you want to effect, and none of your favourite apps require it, then you don't need it - that's if you're a normal user

If you're a developer or a developer in the making, it allows easy easy installation and Uninstallation of your rom (your OS) and it allows you to edit specific things like the name your phone displays online (you could make it display s6 and playstore and other apps think your using an s6), you can potentially change your resolution too (that never ends well tho from my little experience).
I think I covered almost everything, also if you aren't satisfies with it you can always unroot your phone

OT: how do you know he did not reinstall your exact same OS?

Yes, you might not need to root to get it tho, you should visit Xda developers (website), you might be able to do it with Odin (a PC app) and the roms file (usually a large file [around 1gb]) and install the OS (flash it), tho you might be able to do it on your phone with a recovery app called clockworkmod (which is normally installed when you root)

Yeah you guys can upgrade to unofficial marshmallow OS from Xda forums. And if you wait for few more weeks you will probably get a alpha/beta version of android N thanks to the developers of Xda.

You should try visiting Xda forum for your device, they have procedures to even unlock bootloader of locked devices from networks.

Yeah afaik XDA hasn't been able to crack the DT2 yet (last time I checked was Februrary), but I'll take another look :(
