Well the Logia Fruits are generally the best....the ones that shine (no pun intended) are the Pika-Pika no mi and then the Yomi-Yomi no mi
Od Zoan fruits the Model Pheonix easily shines as well as the T-Rex and whatever Kaidou has if he's a Zoan. Chopper's is pretty good too!
With Paramecia I'd say the best are the Guro-Guro no mi (I think that's what Whitebeard's fruit is called), the Gomu-Gomu no mi (we've seen what Luffy can do), and the Hama-Hana no mi (is really OP when you think about how it could be used...lately though Oda hasn't done much with Robin in combat).
