No, it means if the attack hits the mirror, it changes its properties to counter. If the attack bypasses the mirror, it bypasses it. Plain and simple. It's never shown expanding or changing its shape.

Yata mirror could change its shape to provide 360 degree defence and is shown to negate impact from collision.
Whether susanoo will shatter by the weight would depend on the direction the shield is held at the time they are summoned:

1. If the mirror is lifted to face the sky, the opposing forces from the ground and the animal might crush the susanoo.

2. If held in the horizontal direction, the mirror alone can support the weight via its extended parts and the susanoo would receive no impact.

On the other hand, what's to say the shield wouldn't extend to a full sphere to negate all the forces applied on the susanoo?

When it comes to outlasting, yeah Itachi would eventually have to drop the shield because of exhaustion. That is if he chooses to do nothing about the giant animal on top of him.

But it only negates ATTACKS. Summoning an animal is a summoning. The technique only works because it's just a strategic consequence. Databook can't talk itself around that.

Itachi's susanoo can move it's arms through a physical body like a ghost now? It's squashed, how will it maintain a stabbing motion?

He would not need to counter the animal with the susanoo, though. For example, what I had in mind is dispatching a clone to force the animal to go away with genjutsu, disregarding any other external factors of course.
