1.) Yagura
I've always wanted to learn more about Yagura and see how he became the 3-tails jinchuriki as well as a Kage. I'd also like to see some of his battles and what his reign was like before Obito stepped in.
2.) Obito's reign as Mizukage
We could learn about how Obito infiltrated the Hidden Mist, put Yagura into a genjutsu (maybe it happened at the end of a large battle?), and could also see how they extracted the 3-Tails. We could also see how he established the Bloody Mist era and see some of the missions he had the country carry out for his agenda.
3.) The 7 Swordsmen
I have a bad feeling Obito had a lot to do with the falling out and deaths of the 7 Mist Swordsmen. Perhaps they were sent on missions that ultimately got them killed? And what did he do that made Zabuza take an assassination attempt on the Mizukage? It would be cool to see how that all went down.
4.) Haku and the Yuki Clan
I'd love to see more about Haku and his clan during The Land of Water's civil war era. It would also be interesting to see Haku's missions while with Zabuza and how he infiltrated the The Undertaker Squad.
5.) Ao and his Byakugan
I've always wanted to know who Ao defeated to get the Byakugan. Since the eye never got sealed it's obvious then that he defeated a main branch Hyuuga.
6.) More Kisame
Because he's badass and he deserves more screen time.
7.) Suigetsu and the Hozuki Clan
I want to know more about Suigetsu's past as well as more about his brother Mangetsu and the clan. It would be cool to see how you become a trainee under the 7 Swordsmen.
8.) Kimimaro and the Kaguya Clan
We already saw the results in the anime but it would be rad to see their battle against The Mist.
9.) Mei Terumi
It would be awesome to see how Mei moved up the ranks and became Mizukage after Obito left.
