-Kaidou is Chinese also, but he represents a Mongol. The Mongols are from Mongolia; an empire bordered between Russian and China who once conquered China and Russia and started the Yuan dynasty.
-Real world China and Japan have been enemies for centuries but was at one time at peace. In Japan's early days, Chinese Buddhists came to relatively young japan and spread Buddhism through out the country with their religious scrolls. Since Shintoism was similar to Buddhism, it was easy for it to spread. The two religions merged and Japan inherited some of China's views of Dragons and the Holy Beast. Before Buddhism came along, Japan completely viewed dragons are serpent/snake like creatures that spend their days in water and believes in yokai(demons, evil spirits, apparitions).
-The peace between China and Japan was broken when the Mongols invaded Japan in 1274. The Mongols invaded China and arouse the Yuan dynasty. The leader and founder of the Yuan Dynasty was Kublai Khan, the grandson of Genghis Khan, who declared himself Emperor of China.

The Mongols invaded Japan twice and both times ended in failure because of bad weather and flawed ships that led to the demise of Kublai Khan's fleets. In the 2nd invasion of Japan, Samurais were bombarded with bomb and arrows and 100 Samurais were captured. The Mongols had superior weaponry. Luckily for the Samurais, the Mongol fleets were poorly prepared for the maritime conditions. A third invasion was planned but never happened as Kublai Khan died. Note: Gol D. Roger was executed 24 years ago and his last words inspired pirates such as Gekko Moriah to go the NW. So all/most occurrences happened in the timespan of 24 years at most.

Centuries ago, Wano was the usual country of samurais until one day it was ravaged by a dragon. The dragon's rampage was brought to a halt when it was slain by Ryuma, the WSS of his time. Ryuma was regarded as legendary hero who saved Wano and his burial ground was very sacred on that island. Ryuma was most likely the greatest hero in Wano's history(more on this later).
Centuries later, Wano was invaded by Gekko Moriah(who looks like a Japanese yokai), who sought to make Wano his territory.
Moriah's invasion didn't last long however, as Wano was saved by the Holy Beast Seiryu(blue dragon).
Kaidou slaughtered the rookie Moriah's crew, maimed Moriah himself and let him flee with Ryuma's corpse(a trait/habit of Kaidou is slaughtering the crews of rookie pirates and letting their beaten captain live with visible scars not only to set an example, but as a warning to any fool who thinks they can overthrow him).
Ryuma's corpse being stolen was the darkest day in Wano's history as stated by Kin'emon. The entire country fell to its knees for a while.
It was this incident that Kaidou took advantage of to show his true "Mongol" colors and took Wano by force and declared himself their Emperor.

It wasn't long until Wano discovered that their suffering was not over because their Holy Beast turned out to be a tyrant, a pirate and a dragon(zoan). This time however, Wano didn't have a samurai strong enough to slay the beast. The samurais are strong, but they are no match for the dragon zoan Kaidou. Luckily for Wano though, their was another Holy Beast ready to help them:

Fun Trivia: Did you know that Feudal Japan had a Samurai group called Byakkotai(White Tiger Force)?
Whitebeard saved Wano from Kaidou and made the island his territory.
But how is Kaidou a dragon zoan?
For starters, it fits perfectly with Buddhism and Shintoism as well as Wano's(Japan) and Kano's (China)conflict.
Lets not forget that Kin'emon HATES dragons with a passion. So much so that it seems abnormal.

Revenge for what? Revenge for what Kaidou did to his country.
Also, lets look at the Dragon from the Chinese zodiac:
Positive Traits-Vigorous, strong, self-assured, proud, direct, dignified, passionate
Negative Traits-Tactless, arrogant, imperious, tyrannical, demanding, rebellious, intolerant, dogmatic, violent, impetuous.
Health Issues: Prone to extreme temper and malignant narcissism. The bolded parts sound VERY MUCH like Kaidou.

Hold it! Whats with this weird holy beast talk?
The 4 Yonkou of One Piece are represented by the 4 holy beast of Japan:
Big Mam(Genbu)-Black Tortoise
Whitebeard(Byakko)-White Tiger
Kaidou(Seiryu)-Azure Dragon
Shanks(Suzaku)-Red Phoniex
However, these beasts are also used in China but Oda is using the Japanese names instead of the Chinese ones. In China, there is a 5th beast called "Yellow Dragon" but in Japan, there is no 5th beast, only "voidness."
In many Chinese and Japanese mythology, dragons are a sign of imperial strength and power and is often viewed as the king of beasts. A creature so formidable that it reigned supreme over all other species and warriors who can slay or gain the power of a dragon are destined for greatness. However though, in Japan, the only creature that to stand equally with the DRAGON is the TIGER. Its where the saying "eye of a tiger" comes from and why so many Japanese(and Chinese) anime and movies have people who is represent the dragon fighting equally with the person who represent the tiger. I believe Oda used this to represent Kaidou and WB's encounter in Wano, as samurais are represented by the tiger and mentions the tiger in their code.

Kaidou lost the battle, but the war was far from over. Kaidou wanted WB dead and Wano back. Kaidou set is sights on Wano's neighboring island Kano and made it his territory by gaining their trust instead of taking it by force.
Kano is a FAVORITE ISLAND of Kaidou. Why is that? Well not only are the Kano strong allies with their Hasshokun, it houses an extremely important piece of Kaidou's rise to power plan: the weapons factory.(more on this later)
Don't think the island is Kano? Well look at this:
The guy on the left is Scotch. He's one of the guards of the weapon factory and look at the number tattoos. Also, look back up at the scan with Drake. Take a look at the background. Those structures look like circus tents right? And Sai looks like he belongs in a circus. That ruffle around his neck is a trademark wear for clowns.
Sai and Boo also wears Jester/clown like pants.
The color and pattern of Sai's pants is popular choice of circus tents.
Whaddaya know? Scotch wears pants similar to that too.
And remember the panel with the weapons factory above? You can see the shoes of one of the workers and it looks like a jester shoe.
Kaidou's name has several meanings and one of them is church. The Mongols once conquered Russia and in Moscow, churches often comes with a circus. Circuses are also primary sources of entertainment in China.
But there is nothing Chinese about that Snow Island.
Wrong. That fact that its a snow island strengthens the possibly of it being Kano. China suffers from extreme winters and blizzards and the Dragon is a symbol of the spring season; a symbol of rebirth. China is also prone to construction failures and air pollution. Kano is permanently in an extreme winter and it seems like they are reconstructing the place. We have structures being made on top of mountains and metal trees.
Dude its called the Country of Flowers is it not?
And Dressrosa means "Pink Country" and is known as the country of roses. Is the whole island pink? Does it have roses absolutely everywhere? Nope. Its just an expression. "Country of Flowers" reminds me of China as well. China has a lot of exotic flowers but most are lost because of desertification, pollution and extreme winters. Kano being a permanent winter island means a low quantity of flowers. Also, those weird mountains in the background of Kano reminds me of the Himalayas in China; the northern point of Mount Everest that gets buried in snow in the winter. If Kano is based on China, it should be HUGE. Kano probably gave Kaidou the "Himalaya" part of Kano that is permanently winter.
Kano is at war right? That snow island isn't.
Not quite.
Scotch here stopped a rebellion.
But how does Kaidou have a weapon factory on Kano without the Chinjao gang knowing? They are trying to stop the flow of weapons.
Because the factory is hidden.
You can see that Caribou found the factory in his logia form. His logia form allows him to seep through cracks and small corridors undetected. Also, we only get to see the factory from the inside. I think that's a hint that its hidden.
Note: Kaidou is not the emperor of Kano or anything. Its just under his "protection." Its why Scotch refers to him as "Kaidou-sama." Kaidou is simply posing as Kano's ally so that the weapons can be built. I could say Scotch n' company are actually members of Kaidou's crew and is acting as Kano's "Great Wall of China" and scares off any fool by using Kaidou's name. Kano completely trust Kaidou so they wouldn't expect him to be lying.

Getting back to the factory, Kaidou is obviously using the factory to make himself weapons and planned on tricking Kano and Wano into going to war, but there was still a big problem: Whitebeard. Wano is still WB's territory and whatever big issue Wano deals with, WB will help them. Kaidou himself may be on par with WB, but he needs more firepower and strength for his crew. Luckily for Kaidou, his weapon making caught the attention of the Gorosei and they became business partners. (next part is based on @beck26 's theory) In exchange for giving them weapons through the underground trades, the Gorosei will supply Kaidou with SMILES using Doflamingo as a medium. Incase your wondering why the Gorosei would work with Yonkou, its because the WG benefits from the yonkou's reign. As long as there are pirates, the WG can pretend to be justice. As long as there are outlaws, the WG has a steady source of income.
Over the years, Kaidou obtained SMILE after SMILE strengthening his crew. When Kaidou heard of WB and Marineford going to war, he planned on ambushing WB but was intercepted by Shanks. Obviously they didn't fight, but considering Kaidou's unreasonable and angry nature, its odd. Either Shanks made some kind of deal with Kaidou or Kaidou left because he didn't want to lose a huge chunk of his fighting force that he has been building to fight WB.

The War of the Summit saw the end of Whitebeard and Wano was now ripe for the taking but like before, the samurais of Wano are very strong aren't going to give in and fall easily. In response, Kaidou decided to teach the arrogant samurais a lesson. Kaidou escalated tension between Kano and Wano and tricked them into going to war with each other. Not only that, Kaidou supplied weapons to many neighboring countries and started wars between them. Wano is losing against Kano because they have Kaidou's officers as allies and Kaidou himself occasionally joining in. The samurais can hold their own against the Happou Nay and lower ranking zoan officers, but many samurai fell with Kaidou himself joined in. His dragon and combat abilities are unmatched.
Even so, the samurais still don't falter. Eventually, Kaidou found out why: The Shogun. The essense of a samurai is their loyalty and protection of their Shogun. If anything happens to him, the samurais would lose their reason to fight. Kaidou himself killed the Shogun of Wano but the samurai still had hope, as the heir still lives: Momonosuke.
Wait. Shouldn't Kin'emon be the Shogun? Aren't Momo and Kin'emon father and son?
First of all, when it comes to becoming a Shogun, bloodlines does not matter. The Shogun(or Emperor) simply picks whoever they think is the most capable. Some heirs are chosen at a young age so that they can learn how to be shoguns early on, so they can develop better leadership than your average samurai(samurais usually fight alone). Shogun means "general" and they are the rulers of the land.
Momosuke already acts like a shogun. He's knows so much despite being so young because he is a shogun in training. He's been in training for 2 years now(he's currently 8)
Why was Momonosuke chosen?
Because he is the young disciplined son of "Foxfire" Kin'emon, who is a member of the Bakufu(officals of the shogun) Kin'emon is the stereotypical samurai and upholds hat samurai way and tradition. His disciplined son is a wise choice.

On the brink of defeat, desperate and fearing the worst, Kinemon, Kanjuuro and a 3rd Samurai was entrusted with the task of helping the next shogun Momonosuke escape and seek the aid of Holy Beast Byakko to once again, aid them against the Holy Beast Seiryu. The closest island to Wano that is under WB's territory is Zou. That is their obvious first destination to locate WB.
While on their way to Zou, they got shipwrecked and ended up Dressrosa. It was there that Momonosuke got traumatized for the first time:
Kanjurro gave himself up so that Kin'emon and Momonosuke could escape Dressrosa, but have you noticed that he wasn't turned into a toy or killed?(Kine'mon remembered Kanjuuro before Sugar was defeated). Have you noticed that Kin'emon was restrained in PH instead immediately being used as a guinea pig for Caesar?
Because Doffy ordered his men and Caesar to let the Samurais live. Doffy did that because he know's Kaidou is after the Samurais and Wano. Killing them off would've been a bad idea and not to mention Doffy can use them as a medium to stay on Kaidou's good side. Hearing that a samurai had escaped Dressrosa(from his goons), Doflamingo decided to fly to PH to find him(Momo has been on PH for a few days before Kin'emon showed up. During that time, Doffy got to PH before Kinemon).
Inside Punk Hazard, Doflamingo was at the right place and the right time:
When Momo fled, he flew right past Doflamingo and since Momo has a trauma of Doffy, he panicked and flew away.
It was then that Doflamingo realized two things: that's Momonosuke was the first artificial dragon zoan to not lose his mind and that he can produce clouds.
Using the clouds Momo produced, Doflamingo flew after Momonosuke which gave Momo a fear of flying.
We know that Kaidou and the WG are doing business with each other so its not that surprising that fake dragons are being made. Vegapunk had been working on Kaidou's dna to make fake dragon zoans for years but had no success(both Kaidou and the WG want competent zoans). Doflamingo had Caesar put Momo in a scrap heap so that the scientist can study him later. If things go well, Doffy can Momo to transverse the Sky Islands. If things go south, Doffy can use Momo to quell Kaidou's anger.
(incase your wondering, Doflamingo ALWAYS knew Law was on PH. Do you think Caesar would let Law stay with him for months without telling Doflamingo?)

The Samurias will eventually arrived at Zou. Kinemon n' company however, don't know that WB is dead as Wano is an extremely secluded country. So secluded that they don't even know what DFs are. Kin'emon will learn of WB's demise in Zou, as it is the place where WB and Ace's graves are.
It is here that they may meet some WB Remnants and the most likely of them is Izo, a former resident of Wano.......
Incase if you are wondering about Izo's past, he was born with a very feminine appearance and was therefore raised as female.
Izo wasn't allowed to carry a sword or fight. When Kaidou first attacked Wano, Izo was exiled because not only did he use a sword(in Marineford, Izo had a sheathed sword at one point) to fight Kaidou's men, he used guns. A complete disgrace for samurais. When WB arrived to save Wano, Izo fought alongside WB with his guns. An outcast with no place in Wano, Izo joined WB.

Vista looks like a typical circus tour host/staff/manager with his tophat and mustache.

All hope isn't lost though, as Kinemon has the future pirate king and his allies willing to help(Luffy, Zoro, Nami, Usopp, Sanji, Chopper, Robin, Franky, Brooke, Sabo, Koala, Hack, Law, Bepo, Bartolomeo, Cavendish, Ideo, Hajrudin, Orlumbus, Blue Gilly, Elizabello etc.)
Why is Sabo going to help?
For straters, Sabo would definately try to help Luffy if he learns Luffy is going against a yonkou. Sabo himself easily jeopardized his mission in Dressrosa by confrounting an admiral. Also, remember the weapon factory on Kano?
Sabo wants to know where the weapons are being made and don't forget when I said the WG are benefiting from Kaidou's reign. Killing 2 birds with one stone, Sabo can be an older brother and a Revolutionary.

Extra Info
Punk Hazard I believe is a heavy foreshadowing to Wano and Kano.
-Wano and Kano are right next to each other is at war with one another
-Kano is an all winter island and Kaido's favorite island
-Half of PH is hot and the other half is cold
-Kin'emon, who's nickname is "foxfire" was first seen(part of him atleast) on the fire half of PH stuck to a dragon against his will(symbolism that Wano is being forcefully controlled by Kaidou)
-Kin'emon's upper half was seen very hostile on the winter half of PH(signifying enemy territory) and his head was a prisoner on the winter half. Like he was defeated on the fire half(Wano) and got transferred to the winter half(Kano) as a prisoner.
-Wano just may be a summer island or atleast deals heavily with fire
Tashigi's sword 'Shigure' means "Rain that signifies the coming of winter" which can be interpted as "an event/struggles that signifies/leads to change." Not only did Tashigi enter the winter half of PH, she fought a women made of snow. She obviously struggles a lot and those struggles changed her opinions of the SHs. It'll be very symbolic if rain began to pour over Wano-kuni during/after the fight with the 7th Shichibuaki and then travels to Kano-kuni and learns about the government corruption from X. Drake. Her opinons of Zoro will change, her opinion of the WG will change and most importantly, her opinion of herself will change. Here is the big question though: will Zoro give Tashigi the Wado Ichimonji? Or will Tashigi let him keep it? One thing I know is that Tashigi may fight the 7th Shichibukai first but will lose, prompting Zoro to take over and beat him. I see a scenario very similar to Monet vs. Tashigi and Zoro but instead of Snow(which signifies winter), there will be fire(which signifies summer).

What is Kaidou's goal?
Kaidou wants to create an empire of beast. A Mongol dynasty-like empire with him as the Emperor. Kano and Wano aren't his only targets. Every nation that is currently at war(including Elizabello's Kingdom of Prominence) is because of Kaidou supplying the nations with weapons. When they are weakened, it'll be easy for Kaidou to take over.
The Luffy-Law alliance will split up into 2 groups: one for Wano and the other for Kano.
Wano-Kuni
Zoro, Tashigi and Cavendish will be the main focus of Wano. Zoro and Cavendish will learn about the curse of their blades(maybe Law aswell) and Tashigi will learn more about swords. Zoro will to cut fire and use black flames. Check to the link to see my Zoro and Cavendish cursed sword theory:
Not only are there officers of Kaidou in Wano, but so is the 7th Shichibukai. Who just so happens to be the one who murdered Kuina:
After defeating Tashigi, the 7th Shichibukai will be beaten by Zoro and Zoro will get the Nidai Kiketsu.
Tashigi will obtain the Kuku Ichimonji
Remember what I said about the tiger being the only creature to fight equally with a dragon? Guess what?Zoro is represented by the tiger. In Punk Hazard, he slayed a dragon with a move called "Tiger Hunt." Zoro won't beat Kaidou, but he'll save Wano from Kaidou's forces and will be viewed as a hero on par with the late Ryuma.
Kano-Kuni
Luffy, Sabo, Drake and the Chinjaos will be the main focus of Kano. Since the weapon's factory is there, quite a bit of Kaidou's officers should be there guarding it along with Drake and Scotch. Don Chinjao will put the Happou Navy under Luffy's command and the Chinjao gang is informed that Kaidou was lying to them(Kano might fight back before they learn the truth though). Luffy, Drake, Sabo and others will fight off Kaidou's officers and the weapons factory will be destroyed. The Wano team will then show up in Kano where Tashigi will learn about the WG corruptions from Drake, and her views and opinion of the WG will change greatly, hence her sword Shigure, "Rain that signifies the coming of winter."

With no way to gain SMILES, the lost of Wano and Kano and most importantly the weapons factory, Kaidou will be pissed. All that's left is for the Luffy-Law-Drake alliance is to fight Kaidou and his hundred beast army hence, Kaidou "of a hundred beasts." Once Kadiou is beaten, there will be no 3rd invasion just like the Mongol's invasion of Japan because Kaidou will die. Blackbeard will kill him, steal his DF and gives it to Stronger, who is Doc Q's horse(it is very common for One Piece villains to be met with great irony. The beastly Kaidou having his DF givin' to freakin' Stronger is super ironic).

The 4 Yonkou of One Piece are represented by the 4 holy beast of Japan:
Big Mam(Genbu)-Black Tortoise
Whitebeard(Byakko)-White Tiger
Kaidou(Seiryu)-Azure Dragon
Shanks(Suzaku)-Red Phoniex
However, these beasts are also used in China but Oda is using the Japanese names instead of the Chinese ones. In China, there is a 5th beast called "Yellow Dragon" but in Japan, there is no 5th beast, only "voidness."
In many Chinese and Japanese mythology, dragons are a sign of imperial strength and power and is often viewed as the king of beasts. A creature so formidable that it reigned supreme over all other species and warriors who can slay or gain the power of a dragon are destined for greatness. However though, in Japan, the only creature that to stand equally with the DRAGON is the TIGER. Its where the saying "eye of a tiger" comes from and why so many Japanese(and Chinese) anime and movies have people who is represent the dragon fighting equally with the person who represent the tiger. I believe Oda used this to represent Kaidou and WB's encounter in Wano, as samurais are represented by the tiger and mentions the tiger in their code.

Kaidou lost the battle, but the war was far from over. Kaidou wanted WB dead and Wano back. Kaidou set is sights on Wano's neighboring island Kano and made it his territory by gaining their trust instead of taking it by force.

Kano is a FAVORITE ISLAND of Kaidou. Why is that? Well not only are the Kano strong allies with their Hasshokun, it houses an extremely important piece of Kaidou's rise to power plan: the weapons factory.(more on this later)

The guy on the left is Scotch. He's one of the guards of the weapon factory and look at the number tattoos. Also, look back up at the scan with Drake. Take a look at the background. Those structures look like circus tents right? And Sai looks like he belongs in a circus. That ruffle around his neck is a trademark wear for clowns.

And remember the panel with the weapons factory above? You can see the shoes of one of the workers and it looks like a jester shoe.
Kaidou's name has several meanings and one of them is church. The Mongols once conquered Russia and in Moscow, churches often comes with a circus. Circuses are also primary sources of entertainment in China.
But there is nothing Chinese about that Snow Island.
Wrong. That fact that its a snow island strengthens the possibly of it being Kano. China suffers from extreme winters and blizzards and the Dragon is a symbol of the spring season; a symbol of rebirth. China is also prone to construction failures and air pollution. Kano is permanently in an extreme winter and it seems like they are reconstructing the place. We have structures being made on top of mountains and metal trees.
Dude its called the Country of Flowers is it not?
And Dressrosa means "Pink Country" and is known as the country of roses. Is the whole island pink? Does it have roses absolutely everywhere? Nope. Its just an expression. "Country of Flowers" reminds me of China as well. China has a lot of exotic flowers but most are lost because of desertification, pollution and extreme winters. Kano being a permanent winter island means a low quantity of flowers. Also, those weird mountains in the background of Kano reminds me of the Himalayas in China; the northern point of Mount Everest that gets buried in snow in the winter. If Kano is based on China, it should be HUGE. Kano probably gave Kaidou the "Himalaya" part of Kano that is permanently winter.
Kano is at war right? That snow island isn't.

But how does Kaidou have a weapon factory on Kano without the Chinjao gang knowing? They are trying to stop the flow of weapons.

You can see that Caribou found the factory in his logia form. His logia form allows him to seep through cracks and small corridors undetected. Also, we only get to see the factory from the inside. I think that's a hint that its hidden.
Note: Kaidou is not the emperor of Kano or anything. Its just under his "protection." Its why Scotch refers to him as "Kaidou-sama." Kaidou is simply posing as Kano's ally so that the weapons can be built. I could say Scotch n' company are actually members of Kaidou's crew and is acting as Kano's "Great Wall of China" and scares off any fool by using Kaidou's name. Kano completely trust Kaidou so they wouldn't expect him to be lying.

Getting back to the factory, Kaidou is obviously using the factory to make himself weapons and planned on tricking Kano and Wano into going to war, but there was still a big problem: Whitebeard. Wano is still WB's territory and whatever big issue Wano deals with, WB will help them. Kaidou himself may be on par with WB, but he needs more firepower and strength for his crew. Luckily for Kaidou, his weapon making caught the attention of the Gorosei and they became business partners. (next part is based on @beck26 's theory) In exchange for giving them weapons through the underground trades, the Gorosei will supply Kaidou with SMILES using Doflamingo as a medium. Incase your wondering why the Gorosei would work with Yonkou, its because the WG benefits from the yonkou's reign. As long as there are pirates, the WG can pretend to be justice. As long as there are outlaws, the WG has a steady source of income.

Over the years, Kaidou obtained SMILE after SMILE strengthening his crew. When Kaidou heard of WB and Marineford going to war, he planned on ambushing WB but was intercepted by Shanks. Obviously they didn't fight, but considering Kaidou's unreasonable and angry nature, its odd. Either Shanks made some kind of deal with Kaidou or Kaidou left because he didn't want to lose a huge chunk of his fighting force that he has been building to fight WB.

The War of the Summit saw the end of Whitebeard and Wano was now ripe for the taking but like before, the samurais of Wano are very strong aren't going to give in and fall easily. In response, Kaidou decided to teach the arrogant samurais a lesson. Kaidou escalated tension between Kano and Wano and tricked them into going to war with each other. Not only that, Kaidou supplied weapons to many neighboring countries and started wars between them. Wano is losing against Kano because they have Kaidou's officers as allies and Kaidou himself occasionally joining in. The samurais can hold their own against the Happou Nay and lower ranking zoan officers, but many samurai fell with Kaidou himself joined in. His dragon and combat abilities are unmatched.
Even so, the samurais still don't falter. Eventually, Kaidou found out why: The Shogun. The essense of a samurai is their loyalty and protection of their Shogun. If anything happens to him, the samurais would lose their reason to fight. Kaidou himself killed the Shogun of Wano but the samurai still had hope, as the heir still lives: Momonosuke.
Wait. Shouldn't Kin'emon be the Shogun? Aren't Momo and Kin'emon father and son?
First of all, when it comes to becoming a Shogun, bloodlines does not matter. The Shogun(or Emperor) simply picks whoever they think is the most capable. Some heirs are chosen at a young age so that they can learn how to be shoguns early on, so they can develop better leadership than your average samurai(samurais usually fight alone). Shogun means "general" and they are the rulers of the land.
Momosuke already acts like a shogun. He's knows so much despite being so young because he is a shogun in training. He's been in training for 2 years now(he's currently 8)

Why was Momonosuke chosen?
Because he is the young disciplined son of "Foxfire" Kin'emon, who is a member of the Bakufu(officals of the shogun) Kin'emon is the stereotypical samurai and upholds hat samurai way and tradition. His disciplined son is a wise choice.

On the brink of defeat, desperate and fearing the worst, Kinemon, Kanjuuro and a 3rd Samurai was entrusted with the task of helping the next shogun Momonosuke escape and seek the aid of Holy Beast Byakko to once again, aid them against the Holy Beast Seiryu. The closest island to Wano that is under WB's territory is Zou. That is their obvious first destination to locate WB.

While on their way to Zou, they got shipwrecked and ended up Dressrosa. It was there that Momonosuke got traumatized for the first time:

Kanjurro gave himself up so that Kin'emon and Momonosuke could escape Dressrosa, but have you noticed that he wasn't turned into a toy or killed?(Kine'mon remembered Kanjuuro before Sugar was defeated). Have you noticed that Kin'emon was restrained in PH instead immediately being used as a guinea pig for Caesar?
Because Doffy ordered his men and Caesar to let the Samurais live. Doffy did that because he know's Kaidou is after the Samurais and Wano. Killing them off would've been a bad idea and not to mention Doffy can use them as a medium to stay on Kaidou's good side. Hearing that a samurai had escaped Dressrosa(from his goons), Doflamingo decided to fly to PH to find him(Momo has been on PH for a few days before Kin'emon showed up. During that time, Doffy got to PH before Kinemon).
Inside Punk Hazard, Doflamingo was at the right place and the right time:

When Momo fled, he flew right past Doflamingo and since Momo has a trauma of Doffy, he panicked and flew away.

It was then that Doflamingo realized two things: that's Momonosuke was the first artificial dragon zoan to not lose his mind and that he can produce clouds.

Using the clouds Momo produced, Doflamingo flew after Momonosuke which gave Momo a fear of flying.

We know that Kaidou and the WG are doing business with each other so its not that surprising that fake dragons are being made. Vegapunk had been working on Kaidou's dna to make fake dragon zoans for years but had no success(both Kaidou and the WG want competent zoans). Doflamingo had Caesar put Momo in a scrap heap so that the scientist can study him later. If things go well, Doffy can Momo to transverse the Sky Islands. If things go south, Doffy can use Momo to quell Kaidou's anger.
(incase your wondering, Doflamingo ALWAYS knew Law was on PH. Do you think Caesar would let Law stay with him for months without telling Doflamingo?)

The Samurias will eventually arrived at Zou. Kinemon n' company however, don't know that WB is dead as Wano is an extremely secluded country. So secluded that they don't even know what DFs are. Kin'emon will learn of WB's demise in Zou, as it is the place where WB and Ace's graves are.

Izo wasn't allowed to carry a sword or fight. When Kaidou first attacked Wano, Izo was exiled because not only did he use a sword(in Marineford, Izo had a sheathed sword at one point) to fight Kaidou's men, he used guns. A complete disgrace for samurais. When WB arrived to save Wano, Izo fought alongside WB with his guns. An outcast with no place in Wano, Izo joined WB.

Why is Sabo going to help?
For straters, Sabo would definately try to help Luffy if he learns Luffy is going against a yonkou. Sabo himself easily jeopardized his mission in Dressrosa by confrounting an admiral. Also, remember the weapon factory on Kano?

Sabo wants to know where the weapons are being made and don't forget when I said the WG are benefiting from Kaidou's reign. Killing 2 birds with one stone, Sabo can be an older brother and a Revolutionary.

Punk Hazard I believe is a heavy foreshadowing to Wano and Kano.
-Wano and Kano are right next to each other is at war with one another
-Kano is an all winter island and Kaido's favorite island
-Half of PH is hot and the other half is cold
-Kin'emon, who's nickname is "foxfire" was first seen(part of him atleast) on the fire half of PH stuck to a dragon against his will(symbolism that Wano is being forcefully controlled by Kaidou)
-Kin'emon's upper half was seen very hostile on the winter half of PH(signifying enemy territory) and his head was a prisoner on the winter half. Like he was defeated on the fire half(Wano) and got transferred to the winter half(Kano) as a prisoner.
-Wano just may be a summer island or atleast deals heavily with fire
Tashigi's sword 'Shigure' means "Rain that signifies the coming of winter" which can be interpted as "an event/struggles that signifies/leads to change." Not only did Tashigi enter the winter half of PH, she fought a women made of snow. She obviously struggles a lot and those struggles changed her opinions of the SHs. It'll be very symbolic if rain began to pour over Wano-kuni during/after the fight with the 7th Shichibuaki and then travels to Kano-kuni and learns about the government corruption from X. Drake. Her opinons of Zoro will change, her opinion of the WG will change and most importantly, her opinion of herself will change. Here is the big question though: will Zoro give Tashigi the Wado Ichimonji? Or will Tashigi let him keep it? One thing I know is that Tashigi may fight the 7th Shichibukai first but will lose, prompting Zoro to take over and beat him. I see a scenario very similar to Monet vs. Tashigi and Zoro but instead of Snow(which signifies winter), there will be fire(which signifies summer).

What is Kaidou's goal?
Kaidou wants to create an empire of beast. A Mongol dynasty-like empire with him as the Emperor. Kano and Wano aren't his only targets. Every nation that is currently at war(including Elizabello's Kingdom of Prominence) is because of Kaidou supplying the nations with weapons. When they are weakened, it'll be easy for Kaidou to take over.
The Luffy-Law alliance will split up into 2 groups: one for Wano and the other for Kano.
Wano-Kuni
Zoro, Tashigi and Cavendish will be the main focus of Wano. Zoro and Cavendish will learn about the curse of their blades(maybe Law aswell) and Tashigi will learn more about swords. Zoro will to cut fire and use black flames. Check to the link to see my Zoro and Cavendish cursed sword theory:

After defeating Tashigi, the 7th Shichibukai will be beaten by Zoro and Zoro will get the Nidai Kiketsu.

Remember what I said about the tiger being the only creature to fight equally with a dragon? Guess what?Zoro is represented by the tiger. In Punk Hazard, he slayed a dragon with a move called "Tiger Hunt." Zoro won't beat Kaidou, but he'll save Wano from Kaidou's forces and will be viewed as a hero on par with the late Ryuma.
Kano-Kuni
Luffy, Sabo, Drake and the Chinjaos will be the main focus of Kano. Since the weapon's factory is there, quite a bit of Kaidou's officers should be there guarding it along with Drake and Scotch. Don Chinjao will put the Happou Navy under Luffy's command and the Chinjao gang is informed that Kaidou was lying to them(Kano might fight back before they learn the truth though). Luffy, Drake, Sabo and others will fight off Kaidou's officers and the weapons factory will be destroyed. The Wano team will then show up in Kano where Tashigi will learn about the WG corruptions from Drake, and her views and opinion of the WG will change greatly, hence her sword Shigure, "Rain that signifies the coming of winter."

With no way to gain SMILES, the lost of Wano and Kano and most importantly the weapons factory, Kaidou will be pissed. All that's left is for the Luffy-Law-Drake alliance is to fight Kaidou and his hundred beast army hence, Kaidou "of a hundred beasts." Once Kadiou is beaten, there will be no 3rd invasion just like the Mongol's invasion of Japan because Kaidou will die. Blackbeard will kill him, steal his DF and gives it to Stronger, who is Doc Q's horse(it is very common for One Piece villains to be met with great irony. The beastly Kaidou having his DF givin' to freakin' Stronger is super ironic).
