Kirge wasn't a sternritter so him and Ichigo's fight isn't indicative of this, but the fact they need to steal a bankai suggests that this is true.

Again, Ichigo's Bankai increases his speed and Kirge wouldn't have the skill of the sternritters so whatso we don't know but the bankai thing is definitely crucial

It's not said they can't win against bankai it's just said they are wary of it, I mean can you imagine Ikkaku's bankai beating one of them to be honest it depends on the bankai.

Also technically so far we have seen the vandereich are just as fast since one was able to match Shunsei in speed and shoot him in the eye.

There weakness is they have two abilities however to use one they must stop using the other it's where speed and power come into play.

You're underestimating the Sternritters aka the Star Knights here.

The Captains themselves, including Byakuya of all people arrogant, admitted outright that these Sternritters are not opponents they can beat without their Bankai. What this means is that the Shinigami need to use full force in order to fight them. From this, I don't see where you're getting the idea that the Sternritters can't beat opponents with Bankai.

As far as I'm concerned, even without stealing the Captains' Bankais the Sternritters could put up a very very very even battle. They're only stealing them because...well...why wouldn't they? If there's an advantage then you take it. Just because they're stealing them doesn't mean they can't beat Bankais.
