Yes, the databook gives Itachi a 2.5/5 when it comes to stamina. And yet, he pushed Sasuke (who has a 3.5/5) to his limits while sick, dying, near-blind, and without an intent to kill while sasuke had a chakra boost from curse mark.
The 2.5 means that at full power, Itachi's stamina is average. What it doesn't take into account is his perseverance. If Sasuke was completely drained by the time Itachi was dead, to the point of falling unconscious (keep in mind, sasuke didn't sustain any major injuries in the fight) then doesn't that contradict Itachi's horrible stamina? In the state Itachi was in, Sasuke shouldn't have been too tired when he won, but he was.
Basically, outlasting Itachi isn't the way someone's going to beat him unless their stamina is ridiculously high (senju dna and bijuu chakra miracles) just because of how much he will do to complete his goal. His life is a key example of this Lol
