He called it Konoha's most powerful, legendary clan yet it's been stated by multiple people (including Uchihas) that Senju was the strongest clan and as far as we know they haven't died off; must have merged with the other clans.

I said this because you said regain as if they were the strongest, nothing said that they were the strongest in Konoha around Minato's reign, we only know that Senju was then Hyuuga was. In part 1 Sasuke himself stated that the Sharingan is awakened by a selected few meaning not many in the clan had it while everyone in the Hyuuga clan were born with their Byakugan (excluding hybrids).
