Ichigo is not a ginger, but he bleached his black hair and it turned orange instead!

It's not that something went wrong, he just didn't bleach it enough. Perhaps the solution was too weak. Then, after seeing the result of improper bleaching (lighter roots, reddish brown ends) he decided that dyeing his hair orange to even the color out would be his best option.
