Itachi was in no real danger. Remember if need be he could have used Susanoo. But he was planning on Killing, only capturing Kabuto.

He was immobilized. Sasuke saved him...he didn't capture Kabuto and the fight would have been way harder for him if Sasuke wasn't there. Sasuke saved him more than once actually especially with Tayuya's Genjutsu.

Like I said, Itachi was in no real danger with Sasuke around. And if Sasuke wasn't around he would have fought with Susanoo, so he would be immune to Tuyuya's Genjutsu, and would have never been immobilized in the first place.
