I love how everyone's list is pretty much the same stuff, the same shounen stuff which everyone's seen, aside from the extra couple which aren't like that, Death Note namely. What about other genres? You're forgetting some truly amazing pieces of work and why? Because they're not shounen? This is why this particular anime community sucks bar a few rare people. Some people don't know how to name amazing pieces which obviously belong up here, Tengen Toppa Gurren Lagann, Gintama, The Melancholy of Haruhi Suzumiya, and so on but why? Because they haven't seen these great anime.
My list would stand as something like this in no particular order:
- One Piece
- Fullmetal Alchemist: Brotherhood
- Puella Magi Madoka Magica
- Gintama
- Tengen Toppa Gurren Lagann
Going over these, One Piece is obviously there, out of all the manga it's the most popular and for good reason. People bitch about the arcs being long or the art being bad but you get over some extremely minor flaws and it's a great masterpiece which is still going. If it wasn't good like some people said, people wouldn't watch and buy it.
Brotherhood even though I've just started watching it, I honestly regret not watching it earlier. The story, characters, animation, music is all so amazing, combined with this power to jerk tears from people is amazing. Plus Winry Rockbell is just a little cutie. <3
Madoka Magica is something I have planned to watch, but it's definitely up there. It's magical girls signing contracts to fight demons. From what I've heard of it, the art is so different, the story is great, it's short which is good for some people who don't really want to commit themselves, but mostly it redefined the magical girl genre (apart from Panty and Stocking with Garterbelt), not something a lot of anime can pull off. Turning something which seems to be for girls into a dark storyline with an evil incubator or whatever Kyuubei is isn't easy.
Gintama is pretty much the slice-of-life anime to watch, if you're looking for something entertaining yet totally amazing at the same time. Unless all you want is moe girls doing cutesy things instead of samurai doing the most random ****, go watch something like K-On or Lucky Star. But seriously, this ranks pretty high amongst western audiences, and is rated #1 on MyAnimeList which some people might not like, but it's good for a reason.
TTGL is something I won't go over much, I actually refuse to watch it since I can't stand mecha much, but it's pretty great if you like giant robots throwing galaxies at one another. The story of how it all happens, Simon, Kamina and Yoko just make it amazing and great, if you're into mecha.
I know a lot of other anime could belong up here, Code Geass, Dragon Ball Z, Death Note etc. but this is my list and my opinion. If you don't like it, deal with it.

2. Inuyasha (It was awesome to me don't care if you dont think so)
3. yu-gi-oh (The only show where problems are solved with a card game)
4.Gantz (Pretty short series but it was exciting still goes on in manga tho)
5.S-cry-ed (short series as well but still goes in manga)

1. One Piece
This is easily the best story I have ever read/watched. Everything about it is on another level. Even though there is no romance in the story, everything else is so well done it really is not needed. It would just be an extra distraction. I reccomend this to anyone who has paitence and likes a really good story. It is not the best at first but it picks up. Not reccomended to the clsoe minded who hate that a show could ever be better then their favoriate show ever.
2. Full Metal Alchemist: Brotherhood
It has everything you could ever want in a manga. Although Brotherhood left out some minor details that were in the manga, it was barley noticeable, and probably only able to be noticed if you saw the first FMA or read the manga. It might not have the greatest fights ever or the deepest story, but there is not a weak spot where it just dips. The overall picture is what makes it great.
3. Code Geass
This could be switched with no. 2 since they are so close together. I normally consider them a tie for second. This was an anime only show so there are no fillers and they could leave you hanging at the last 2 mins to make you want more. This story had so many twists you could not stop watching it.
4. Samurai Champloo
Mugen is a bad ass. This story is funny as hell. It is fun and relaxing to watch. Not much more to say except it is a must watch.
5. Rurouni Kenshin/Yu Yu Hakusho/Eureka 7/many others.
Any anime after this point is really hard to list. They are really close together and are good for different reasons.
Naruto, Bleach, and DBZ also make my top 10 list. Fairy Tail has been creeping up my list as well. Not even at the time skip and it is pretty good.

I don't watch a lot of anime but these were the five animes I can remember clearly about. They were all amazing and I wouldn't mind rewatching them all.
