There is no healthy Itachi, thats why hes around top 15. Bee was never scared of
amaterasu nor sasuke, when he almost "died" he was joking about taking a vacation. He can still stay in 7 tail mode and shit all over Itachi's corpse. You are underestimating perfect jins. and btw: BSM Naruto > Nagato > EMS sasuke.
