So I learned guys that this anime did not include many things from the manga but what I want to know is if you can pin-point certain chapters-arcs to read or if they are scattered. For instance can you tell me if the non-included parts start after a certain chapter so I won't have to read everything before that?

It was a struggle for me too to be honest. I currently am struggling to see where I left off so I just thought screw it, I'll start reading from chapter 1. Now that I'm at chapter 4, they've already skipped a part of where Touka meets Kaneki. It's pretty cool to be honest, give it a shot. And if you're not interested in some pages you have already seen in the anime, then skip them. You don't have to read everything throughly, only those parts where you do not remember seeing in the anime. For example, Kaneki stabs himself but instead of the knife breaking into half it was bent. There are small and pretty big details not mentioned in the Anime but I'd say to give it a shot. ^^

And for your question; I'm still trying to figure out lmao.

The answer is simple. The started skipping stuff from chapter 1 of the manga to the end of it. If you want you can speed read dialogue and action scenes that you have already watched in the anime.
