The Mist ninja wanted it really badly.

But why?

My guess is to research the medical ninjutsu. Tsunade, as a ninja from the Leaf, most likely would have first taught her own village to be extremely proficient in it.

But how well off were the other villages?

If I had to guess, I would say not too well off. To me the Mist has always seemed like one of the poorer nations, that's usually behind the others. Perhaps, while medical ninjutsu was spreading to other nations, the Mist fell behind.

So what do they do?

They find a Leaf shinobi that knows medical ninjutsu of course! This is just a guess, but if the parrallels hold true, Rin was also very proficient at medical ninjutsu just like Sakura and Tsunade. When the Mist found Rin, they wanted to capture her.

So, in summary:

While other nations were developing medical ninjutsu, The Mist Village was falling behind. As a last resort, they sought out to capture a medical nin from the Leaf, who would have been the best at medical ninjutsu. They found Rin, and attempted to capture her to learn the secrets of medical ninjutsu.

They didn't want her dead, they wanted to interogate to get information from her. That's why Kakashi killed her.

sounds plausable well have to wait and see till they show kakashi and obito fighting in kaumi's other dimesion. the mist most likley had medical ninjustsu but it could have been a mission

Since she was a chunnin I'm sure she had learn an exceptional amount of jutsu's maybe Thar's why they wanted her body or she could have seen something that the hidden mist were doing and they found her and try to retrieve her body so no one
can know

Her body could have possibly held a strong chakra, or kekkai genkai. We barely knew much about Rin. Her DNA could of been a cure to something. The ninja were extremely persistent in trying to obtain her body and died.

They couldn't possibly learn Medical Ninjutsu from her corpse alone, it wouldn't make sense.

Not to mention the fact that to them, it was absolutely crucial that the enemy wouldn't get their hands on her body, which wouldn't really matter that much to them if Medical Ninjutsu was their only goal. They could have just found another ninja in the war, but instead, they all kept attacking Obito despite his superiority, in order to keep her body.

Dude, her dead bod wouldn't help them learn medical ninjutsu. I think she was the six-tails jinchuuriki.....
