Based on the masks emerging on their own and Kakuzu planning to take the heart of Kakashi mid-battle, i think the masks automatically appear with his jutsu, similar to how the symbols for summoning automatically write themselves out on the ground.

But its still possible that he needs to fetch actual masks for aesthetic purposes and normal hearts just sit hidden in his back. Even so, it can't be necessary for them to be Uzumasks (hehehe) because Kakuzu has been going around for ages collecting hearts.
