Itachi defeating Kabuto because of morals but not in strength (which Itachi admit himself), both of them literally cant defeating Sage Mode Kabuto they found a way to cancelled his spirit through Izanami (exchange for lose with eye) trapped Kabuto inside his own memory which is after that Kabuto still succeed. PS can be cancelled if Sasuke receive serum, drugs or curse seal they made which the way to overcome those with Kaguya linage. Senjutsu is strong and those gifted with senjutsu can change earth or land geography as willingly just like PS.
