In anime/manga, its a common trope for the Tsundere to end up with the immature/playful guy.

Fair enough; let's just say that I disagree with your personal opinion there.True she's a Tsundere but she's also very intelligent. The one who passed the written exam without cheating, figured out Tobi's technique and found a cure for an incurable poison. I see what you mean, as I've noticed that theme in many anime, but Sakura tries to mature him in a way I see it as her trying to change him into a guy she prefers. That's just my personal opinion, mind you.
Anime, I think once in the manga she smiled at him being goofy. She never gets riled up and always remains calm. He needs someone who can keep him in control but also let him be himself. I still think there's more to Hinata, too if given the chance to develop further.

As to the second part, the problem is that while Hinata would indeed let him be himself, she would not be able to keep him in control. As much as she has developed in recent chapters, she remains much too submissive around Naruto (and still stutters around him, by the way). As to her general personality developing much further beyond that, I unfortunately doubt it, as Ch.615 is seen as a sort of closing development for her which led to other side character's developments (as foreshadowed by 573). What's left primarily is the development of more major characters such as Sakura, Sai, etc.
