You have a point.
The reason why people shouldnt be complaining is that now all the bijuu are in front of madara, there are no hidden villages with people/seals/barriers etc. So that takes much longer to complete, Madara would have to go to each village & capture the jinchuuriki himself & extract the bijuu himself.
This way madara isnt doing it one at a time, they're right in front of him.

bijuu vs human that you listed is the sanbi vs deidara which was a surprise attack, sanbi can just easily kill deidara with bijuu dama
bijuus are weak against genjutsu just like they are weak against mokuton suppression techniques or sealing techniques
and none of teh jinchurikis captured by akatsuki were perfect which means they were unable to harness the full power of the bijuus, killer bee was restricted by kishi against kisame and wanted to escape from the village against sasuke, that alone speaks volumes
