ninjutsu : Orochimaru..He mastered many jutsus with his kinjutsu research and all...Or maybe hiruzen , who mastered all the ninjutsu in the leaf..except bloodline abilities
genjutsu:Maybe Itachi ...or maybe Shisui..I know not.
taijutsu: We haven't seen that many tai-jutsu users so i will go with Might GUy
dojutsu: Madara , itachi or Nagato

swordsman: I don't know....Kisame?
kunai : Who fights mainly with weapons in the Narutoverse anyway? Ten Ten perhaps?

Fire element: Madara? We haven't seen many fire users
water element: Kisame? He seems very good to me
Lightening element: Sasuke with his chidori variants? OR perhaps Raikage or Darui in my opinion
earth element: Who uses earth in naruto? Lol , can't remember xd
Wind element:Temari? Naruto? Danzo?

summoning technique: Do you mean who have the most summons? Because there is no best user at summoning like you say..Perhaps Nagato due to his OP summons
sealing technique: We haven't seen so many such users so I will go with Minato or something?

Strongest? Cerberus because it can't die unless Animal Path/Nagato does, if Kurama count as a summon then him too. Manda 2 pretty much shits on every other summon but I didn't include him. Aside from that, Shima/Fukasaku for obvious reasons.

Favorite? Fukasaku, Gamabunta, maybe someone else I guess.
