Tanking is pretty much withstanding an attack with little to no damage, right? Would you still call it "tanking" if someone does receive hardly any damage, but is knocked out?

It depends, if it's an attack known to devastate/kill/destroy and you get knocked out with lil damage than yea you tanked it imo

To have been knocked out, the subject must have undergone quite a bit of damage, despite it not being on the external surface (skin), so I would personally not consider it a "tank".

The most simple, and basic definition of tanking would be the withstanding of an assault. So, as long as the target remains alive, he/she has tanked.

You're comparing two different things. A sport, where if you're knocked out you lose, to simply a definition of the word tanking.

The 3rd Raikage tanked his Nukite, though passed out. Tanking merely means to survive a directed blow. Though there are other perspectives on the matter.

Simply based on the three bolded fragments, tanking means to survive your enemies assault. Nothing more. Nothing less.
