Itachi's v3 is the one that has like long hair and a face. The one he used in the cave against kabutomaru. V2 is just a giant ribcage with a skull and arms.

okay. so sasuke's v3 is the one against danzo. weird how itachi's looks the most human out sasuke/madara.

Exactly. V3 is the previous stage of the giant susano with a sharp nose (known as v4). Sasuke's has a bow and arrow.

And Itachi's is the coolest imo. It's golden/orange colour, its so different from purple and other types of blue like Sasuke's, Madara's, Kakashi's and Indra's.
