It's not like she was raised by Sakura one of the world's best healers and the villages best, it would be an insult to Sakura and a deduction in Sarada's intelligence if she she couldn't utilize a medical kit.

Basically a foreshadowing to what's to come for her abilities. She prob won't be a main healer like Sakura, but she'll definitely have the knowledge to do so if she wants.

And the Byakugou can fit that role.

Unless they actually make her the medical ninja of the team.

Hopefully, they don’t make her a full-fledged medic with the Sharingan and all that would be a waste.

I figured she would have some type of medical training being primarily trained by Sakura. And that’s a useful skill no doubt.

That being said, I worry this might end up being her go to niche in the long run and I’m hoping she at least branches out into some Sharingan skills and, more importantly, genjutsu skills.
