So being that Sakura summoned Katsuyu, when Katsuyu was at Tsunade's side. Hypothetically if two ninjas have the same summoning contract with an animal and were in need of the summoning in battle against each other, can they summon the animal away from the other ?

There is more than one animal. Also there can be multiple people with the same contract. you didn't see jiraya fighting naruto for the toad. Naruto summoned A TOAD, but not a specific one.

No maybe her duplicating abilities bypasses that law, Slugs are neither man or woman, and they proabably divide to reproduce, and Katsuyu seemed a big happy given Tsunade's current state, so it could be a clone. And maybe thats the only slug to specialize in medical ninjutsu, you all seen the disappoinment on Sakura's face.
