I want to learn water, because I am a Hozuki from Kirigakure. Shinobi there specialize in water techniques. Personally, i wish to use water as a form of offense and defense as it can be fluid to move quickly but still cause great harm to those it faces.

One of the weaknesses (or strengths) of water is the fact that it conducts the lightning element. When lightning is used against water, anyone or thing in contact with the water will receive injuries from the lightning. This can either be beneficial when fighting a water user, or detrimental when using water yourself. A strength of water is that it can actively counter the fire element by essentially smothering the fire's necessary oxygen and putting it out. Water can also be useful in creating a beneficial terrain for yourself in battle if used on a larger scale, as it can create a pool large enough to get you fighting on familiar ground.

Actually, Water and Lightning are neutral to one another. While I like what you said about Lightning, Water and Lightning are best used in combo with one another, and you will find many jutsus suited for such a purpose.

So, Water is actually weak to Earth. Do you know why?

Right, sorry. Earth is strong against water because Earth can naturally absorb water effectively nullifying the water technique, which could even add to the earth's power by creating mud, which could then be sent back against the water user.

*I walk over next to you and sit cross-legged next to you and the river we are facing. I place my palms face up, resting on my legs and concentrate on the flow of the water around me. I feel the pulse of the smallest waves upon the shore and feel how each ripple affects the shore around it differently than the last. I maintain this position, silently for a few minutes, until i open my eyes.*

From the feel of it, i would guess that a water user kneads his chakra into the water in order to give it shape and motion, rather than elemental types such as fire or lightning, in which the user actively creates the element with their own chakra within their body.

This would obviously require a relatively large body of water nearby for all but the most powerful water users.

Excellent. It takes fluid control, and it's a definite different feel than the other two elements.

Now, from your current position, given that you were meditating in quite an astonishing manner earlier, place a single palm upon the surface of the water and send your chakra through it.
Don't give it too much though.
Just a little push as you try to "grasp" water under your control.

*I place one hand gently on the water, just enough to develop a thin film of moisture on my palm. I then focus my chakra into my hand, and then send my chakra outward into the water. On my first try I use too much force and the water is simply pushed away from my hand. I collect myself and place my palm on the water again, this time focusing on not using as much force.

As i feel my chakra stabilize in my hand, I gently raise it from the surface of the water, and a single stream of water, no bigger than an inch in diameter, rises with my hand like a cord attaching my hand to the water.

*I start my sitting cross-legged again on the ground next to the water. As i breathe in and out in rhythm, i knead the chakra within my stomach. As the i finish collecting chakra in my stomach i start to pulsate it to the rhythm of the waves hitting the shore.

I think back to my first successful attempt at manipulating water, and i apply the principles of the water's ebb and flow to the kneaded chakra in my stomach.

With one swift pulse, i expel the newly created, water-based chakra out of my mouth with great force and send it soaring through the air and into the distance, out of sight behind the trees.*

How was that?

So, several questions about the process of your first jutsu.
1. How did the pressure affect the water?
2. What is the purpose of making the water ball-shaped?
3. How can water be defensive?

Well, the more pressure is put into the water, the harder it can hit, and the farther it can be shot out of your mouth.

I would guess that making the water ball shaped allows it to function as a projectile rather than if it were some other shape that wouldn't have as much air resistance which would affect the trajectory and power of the blast.

And water can be defensive when used as a wall. By swirling water around one's self most attacks can be swept out of the way or even redirected at the opponent if the water absorbs the attack. I would also guess that by using the water as a projectile, it could be shot into an incoming attack such as large scale fire attacks, and cause that attack to become unstable and "implode."

1. You hit the point. It's just like when you slip a finger under the faucet and the water goes wild. Any time you use a water jutsu, remember to build pressure if it is directly coming from your body.
2. Exactly. Also, due to the shape of the ball, it also travels more quickly through the air and requires more force to be spread apart.
3. Another great reply. Everyone knows to put out water, one must use fire and this can be done exactly as you described, stopping projectiltes in their movement. We will go over this more as we progress. Excellent responses...<.< 90% better than most people I'm teaching.

Ok! *I start by using the principles of the Suiton no Jutsu that i just learned, and mix chakra in my stomach with the natural properties of water that i observed earlier. When the different characteristics of water have been successfully moulded into my chakra, i release it from my mouth as i did last time.

However, this time i reduce the pressure of the release by so much that instead of forming a solid stream of water, i create a fine mist that is released from my body. The film of air swirls around me until the gassious water has nearly enveloped me.*

Performing this jutsu allows me to move unseen, similarly to using a smoke bomb. However, unlike a smoke bomb, this jutsu allows you to move unseen even by sharingan and rinnegan users.

Sharingan and Rinnegan users are able to see opponents through smoke bombs, as they can track chakra signatures, but as this mist is formed using chakra, and as chakra is dispersed in the mist the sharingan and rinnegan see it as a cloud of color and do not see the individual chakra of the user within it. However, Byakugan users can still see the opponent through the mist just as well as through smoke, as they actually telescope their vision and see through objects, rather than seeing chakra through objects.

(I'm assuming and hoping this is the hidden mist jutsu. Haha)

It is indeed Hidden Mist no Jutsu! Excellent job on noting how they completely render the Sharingan and Rinnegans useless!

However, this also brings another important concept into play. An opponent's field of vision.
Knowing where your opponent is looking at all times is extremely important. If they're focused upon something due to a distraction that you purposely created (say, by tossing a kunai into the air), then you can then pull off another trick on them.
This is especially important when facing Doujutsu users like the Byakugan, because it only has one blind spot, and it's important to be able to strike them from a vulnerable position.
(Kirigakure No Jutsu) - Hidding in Mist Jutsu

Description: This displacement technique creates a thick mist to spring forth by lifting up some water from either a pre-existing source or expelled from their mouth, then goes in and out of sight at will from within the pearly-white realm. The mist's thickness is controlled by the amount of chakra kneaded into it. It can't fool the Byakugan, but, due to the mist being created with the user's chakra, any Sharingan and Rinnegan-user will see the mist coloured by their opponent's chakra, which will effectively hide the user from the dōjutsu.
Note: Can be created through releasing from mouth or manipulating a nearby water source.
Okay, I now want you to focus your Water chakra in front of you to try and create a sword. Think of it like molding clay and make sure the sword is durable enough to do damage.
