technically Yu doesnot have absorbing power. his power plunder helps him to steal abilities of other users.

I should have emphasized humans without a power, though that is the most common use of the word mortal in fiction where superpowers exist. People like Krillin are technically human but not really a mortal human being as they have a power they can access. Batman is more in line of a mortal human. Kenichi and his masters are mortal humans(though the masters could be debated lol)
then its a hard one. i will say Levi or Mikasa from AOT

That being said, I'd need feats for everyone's pick before I could even narrow down a list of my own.

Dude... what..? Firstly there are humans on this planet that can survive a gunshot. Hell my brother has survived multiple. Second, how can you be so disregarding of characters who genuinely trained their asses off to be able to withstand it? And why would you not mention this in the op?

Saitama USED to be so weak that he could die to a gunshot. But he trained and trained and now he can't.

mortal implies being able to be fatally wounded can Saitama even be wounded? How about by a simple gun? Exactly. Saitama is not in the same category as an anime human-istic mortal character. Saitama has passed the mortal realm.
