The moon from soul eater represents the negative energy of the world itself, where the sun represents the positive energy. Supposedly if blood is shed in the night, the blood in it's mouth runs. It's a symbol for insanity per say.

The anime is awesome and it just gets better and better as the episodes continue but the anime does turn away from the manga and also they need to unleash more episodes and a season two, but if you get hooked read the manga.
