look at that Naruto is holding Hinata's hand, but here is the thing hinata isn't squezzing back.

now when the text says, "I am not letting go of your hand" it obviously Naruto thinking so. i mean just look at the picture Hinata's hand is being grabbed and she isn't holding his hand. Naruto is the one that has her hand in his.

of course what i think is that Naruto used the hand as a metaphor to Hinata meaning, "I will not let you go" or something like that.
