I don't see anything wrong with her not wanting to reclaim the position to be honest. She clearly doesn't want it. It doesn't seem like an enticing position either. Still, I agree that there should have been better character development. Same could be said for a lot of other characters.

Hinata viewed herself flawed at first. When people feel this way, they focus on themselves. As a result of paying attention and wishing for self-improvement, they don't think of anything else until they reach it. Her first goal was to get strong, if she has any other goals she moves on from there.

We don't know what exactly happened after the war regarding her relationship with her father. I'm sure Hiashi was impressed with her war feats, she was on the front lines with the other Hyuuga for a time. If she received his acknowledgement, then she likely considered future paths for herself and new-found strength/position with her father. Being a clan leader would be one of them, evidently.
