Given your attitude, the label is probably appropriate.
By the way, I read a report where they looked at the companies meeting these quotas. From their numbers, minorities are not taking any top jobs that can result in great promotions. They get the HR jobs and other clerical positions. So I wouldn’t worry if you apply to those jobs. Your status is still pretty much guaranteed.

Women tend to apply to HR and other such clerical positions because they do prefer to work with people and are less inclined toward jobs requiring large amounts of physical activity or risk. Where women do work in industry - such as factories, it is usually in rather repetitive tasks and on lines where they have others around them to talk to. Women tend to shy away from solitary jobs, heavy-labor jobs, and those with an emphasis on technical expertise. Where technically minded women do tend to gravitate is toward health care and management - where they work with people. Even the "girl nerds" tend to find their way more as project leads or the PR person for research teams and others. It is where women tend to be the most comfortable working.
There are exceptions and nuances to every rule - but the trend is overwhelming in its consistency.
Minorities are a bit harder to gauge as minorities are often politically defined and often without respect to their cultural lineage. Persian blacks are very different from Ugandan blacks, who are both distinct from Spanish Moors. Both are slammed into the same category of "black" within America and other Western nations, which is actually an insult to their individual heritage. Same with the Asians and their distinctions.
My room mate is of heavy Mexican descent. She is, however, an American (interestingly, despite her preference for women and being more masculine in her behavioral trends, she is not exempt from the above rule about where women prefer to work). She doesn't speak Spanish and has to shrug when people come up to her and start chatting away at her in Spanish, with the expectation she is going to understand. Same with her younger sister. Both of whom are quite intelligent - well above the curve.
Generally speaking, the only people I have ever seen treat them with any degree of prejudice is some of the mexican groups who will quickly turn vile toward them when it becomes apparent they aren't of the mexican tribal mindset. Certainly not all mexicans - but a fair percentage of them will. Most of those I work with, however, are just another part of the team. They joke more about their heritage than anyone else does.
As for where they work - they tend toward the manual labor end of things. The women who can be found working the factory floor are typically of germanic or latin descent - the women of those cultures historically have handled a lot of farming, and working on various lines within a factory is a translation of that role into manufacturing. The men of the latin groups are generally manual labor or leads thereof. It's far more rare to find them tackling positions of technical expertise - such as setup operators or in the engineering side of things. This is largely cultural. Blacks are much the same. The cultural push toward education and/or individual expertise is just not present any longer in their cultures.
Contrast to people from the Ukraine (for whatever reason, we have a shit ton of them around here - they probably come close to outnumbering the local black population) - while not necessarily pushed to obtain college degrees, they are all pushed toward individual mechanical and engineering skill sets. If there is a family owned repair shop in town, chances are it is run by someone Ukrainian. They all drive cars with salvage titles (they are geniuses of skirting the edge of the law, too), and they can be found tackling engineering and maintenance positions very handily.
It's culture. They grew up with a father who was always tinkering with the car, working in the wood shop, or soldering circuits. The same culture that drove Tesla is the same culture that is driving many of them. What culture is driving your future?
