Tenseigan wasn't an aloof eye. It was similar in acquisition to the EMS, in that it required a byakugan wielder to transplant a byakugan from someone unrelated, or distantly related (Ootsutsuki and Hyuuga clans). The ability also didn't pass onto Hanabi when she got her eyes back, meaning there are other factors to being able to use it (for instance, being an Ootsutsuki, maybe).

In that sense, Kaguya may well have been able to use the Tenseigan, but didn't need to, since she already had otherworldly powers that made the Tenseigan pale in comparison.

Kaguya was looking down though so Sakura was right above the back of her neck which is the blind spot. The plot no jutsu was making Kaguya make so many dumb mistakes and not using her powers to the full extent a competent ninja would

Sakura was a decent distance above her, it's possible that she was in the blind spot while Kaguya decided to fly up. Plus we dont actually know how big the spot is, Kidomaru's diagram is just an estimate.

An estimate? The byakugan's blindspot is in the neck area. Why do you think neji poured chakra in that area to see kidomaro's arrow?

The weakness is located where the neck meets the torse. So it still doesn't make any sense. It's an inconsistency that's all.

Well as it goes farther back it gets wider, she'd be able to fit in it until she got relatively close, then Kaguya would only have time to look up quickly as the fist slammed down on the side of her face. If you look at her swollen cheek, it becomes clear that Kaguya was not hit on the back of the head but rather the side of the face implying Sakura punched her as she was looking up.

edit: looking at the picture you posted, yeah that is a pretty thin margin, Kaguya must have shoddy Byakugan. Couldn't Sakura use transformation technique to turn into a kunai or anything small enough to fit in the blind spot and transform back right when she's about to make contact? Would have avoided an inconsistency.
