The Uchiha had the limelight for the entire series of Naruto, why do we need to make them relevant villains again after giving their curse a conclusion?

I don't see why an Uchiha has to be butthurt again for him/her to be interesting.

Itachi Uchiha.
No, he was devoted to the village and utilitarian.

Their Uchiha blood makes them unpredictable. Literally every other character who didn't have the curse of hatred was completely and utterly loyal to their village regardless of shortcomings and were entirely predictable. You knew they would never betray even if they had one-million reasons to. We're well aware that this new generation are going to be goody-two-shoes without dark times in the show.
The villains are going to be loyal to the village? You're literally saying the author can't create his own turmoil unless making them Uchiha. The Uchiha curse was to get the manga moving, they can literally add any other characters and make them just as unpredictable without a repetitive narrative such as the curse.

I think you're well aware that barely anyone if nobody will betray the village.

Okay so we have two options:

-Predictable story of good kids vs bad guys.

-Naruto Part One and Shippuden but with their kids.

Both predictable/repetitive.

Creating an interesting story with real characters doesn't need Uchiha is all I'm saying as we've had that story and know how their powers go.

By your rendition, characters have to be basically that to be pronounced unpredictable? I don't see how that is a palatable interpretation, honestly.
Those two define the actions he'd make so yeah.

Imo, Mitsuki is already more interesting than Sasuke was at his age. He seems more mature, and isn't revengeful, or one-dimensional, so that alone keeps things interesting in regards to him.

Do you think the removal of the curse will make the Uchiha less interesting and effectual in the Boruto series?

I don't think the Uchihas will be as important in Boruto to begin with. Even so, Uchihas don't necessarily have to be antagonists.

Dude, I was on the hype train of Mitsuki day 1, but the things people talk about here, made it seem like he faded into the sidelines to me since I don't follow the story right now.
