In a number of ways actually. From what I hear, Slugs don't like getting cut. Hiruzen invented a shuriken jutsu that multiplies his shuriken, and could cut Katsuyu. Hiruzen is pretty mobile for a senior citizen as shown when he fought Orochimaru, so the slugs acid would not hit him for some time. He could use Earth Dragon Bullet, Fire Dragon Bullet, Fire Dragon FLAME Bullet, and could summon Enma and poke Katsuyu to death with the transformed Adamanite Staff.
