why do some people think Shino can take it to high diff against people like Hidan Sasori or Kimimaro?

because we are not totally blinded by someone's power and actually look at matchups :|

Shinos bugs can harm Kimmimaro even with his bones. His new bugs can now eat flesh and if kimmimaro wants to stay alive he will need to avoid Shino's bugs. Shino being a very smart and analytical person coupled with being a long range fighter makes it much more difficult for him to get close. Kimmimaros greatest chance is to use CM which is something the bugs will likely have some trouble absorbing chakra from and make it overall harder to keep Kimmimaro at bay.
