I think we can establish the sharingan can copy gentle fist.
For starters there are multiple instances the sharingan was used to analyze and/or copy taijutsu and kenjutsu abilities.
For example Sasuke when he copied Lee's taijutsu from his first battle with Lee and then again before the chunin exam where he fought Gaara.
Then we have Sarada who was able to analyze her opponents kenjutsu skill pattern and weave his attack at The last moment to deal a fatal blow.
Secondly, we know gentle fist can be learned regardless if you have the byakugan or not because Hinata went ahead and taught Boruto gentle fist taijutsu even though he didn't posses the byakugan.
So it's safe to say that the sharingan can copy any taijutsu style that's not the inner gates and this includes gentle fist.
