We don't know much about Sasuke's training with Orochimaru during the gap between Part 1 and 2. I'll give my take on it. It probably consisted largely of 4 things:
I propose that Sasuke learned more about Ninjutsu on his own, perhaps by reading Oro's large collection of books. With regards to shape manipulation in Ninjutsu, Sasuke was probably guided only slightly by Oro, if at all. He mostly taught himself shape manipulation, which is why Oro was so surprised to be hit with a Chidori Spear. If Oro didn't know Sasuke could make that Chidori variant, he probably didn't know about Kirin either. I'd wager the only Chidori variant he may have known about was Chidori Nagashi.
Chakra capacity & conditioning training
Taijutsu & Kenjutsu training
Kuchiyose (summoning) training
Genjutsu mastery and resistance training
Oro probably forced Sasuke to train until exhaustion several times to improve his chakra reserves and physical stamina. He did this obviously so Sasuke's body would be in great shape when he took over.
I think Oro was responsible for Sasuke's Kenjutsu (swordsmanship) skill and probably worked on his Taijutsu as well, emphasizing projectiles. I think this is why we see such an increase in Sasuke's shuriken proficiency.
As far as we know, Sasuke did not learn how to summon anything in Part 1. Oro not only taught him about summoning contracts with animals, but also helped him make the seals on his forearms for shuriken summoning. My guess is that Sasuke got this piece of training down rather quickly, especially after increasing his chakra reserves.
I'm sure the two of them worked the hardest on this piece of training in preparation for the fight with Itachi. I believe that this training was designed to counter Tsukuyomi and Genjutsu in general. They probably didn't know for sure whether it would work or not, but I'm sure Sasuke, having experienced the terrors of Tsukuyomi numerous times, was familiar with how it felt and was probably able to guide Oro into simulating a similar Genjutsu (less powerful) so that he could practice. There is no way that he went into his fight with Itachi and was able to break the Tsukuyomi with your average, run-of-the-mill Genjutsu resistance training. It was probably very brutal training.
